Using local ingredients and unusual combinations, The Hatchery knows the way to every breakfast (and lunch) lovers heart. Sourced from nearby farms, everything from the cheddar cheese to the maple syrup has a Vermont stamp on it. And since The Hatchery believes in not letting a good thing go to waste, they keep the chickens of Ludlow well fed by giving them any table scraps. Even more unusual, they collect leftover bacon grease and clean and refine it to use in their handmade soaps. Move over Dial!
As someone who could eat breakfast for three meals a day, I had a hard time choosing between:
- The Green Mountain Omelette: Apple, shaved ham, local Crowley chees, topped with Hatchery apple butter
- Famous Downhill: 2 eggs, 2 pieces of French toast (splurge an extra $1 for the cinnamon raisin), bacon, sausage and home fries
- The Vermonter Omelette: Apple, bacon and cheddar cheese (I added avocado because…YUM!)
